Eighth & Roast
During the roasting process beans are heated by direct gas flame and air flow via the convection tube. As the beans are roasted they expand and throw off their silver skin and it’s collected in the chaff collected. During this heating time moisture is released from the coffee and sugars and proteins are caramelized. It’s this little piece of science called the maillard reaction is responsible for that sweet, chocolate, pleasantly acidic notes. Knowing the coffee and knowing the roasting process brings together the perfect symphony of heat and time to produce exquisite coffee.
Eighth & Roast
Roasting of coffee depends on several variable, including: time, temp, & airflow. Expert Science and and exacting Craft manipulates all of these to showcase all the different possible cupping notes individual to each speciality coffee. Our producers grow finest coffee on Earth and we take our experience to make ever note sing pitch perfect. We are in Music City, after all.
